nudefood Peanut Potato Stew

We have been loving supporting local farmers and foods in season, and this recipe was a recommendation from Calgary farmer Kye Kocher from Grand Trunk Veggies! He told us that potatoes are one of the delicious root veggies that are in season locally during the summer and they also can be stored fresh by farmers and sold for many months after that. This makes them a great food to buy from nearby farms and cook with often, so here is a must try recipe that even features our very own natural peanut butter. Gather ingredients from your local farmers market and share with your friends to prove that nothing tastes better than seasonal and local! 

Prep time: 10 mins  |  Cook time: 45 mins  | Servings: 6 (1.5 cups each)


  • 1 tsp extra virgin olive oil
  • 1 medium sweet onion
  • 3 cloves garlic, minced 
  • 2 tablespoons minced fresh ginger
  • 2 potatoes of choice*, cubed 
  • 2 large carrots, cubed
  • 2 handfuls baby spinach or destemmed kale   
  • Freshly ground black pepper 
  • 1 ½ tsp chili powder (or more depending on your liking for spicy) 
  • ¼ tsp cayenne pepper
  • 2 tsp cumin 


1.  In a large saucepan, heat the oil over medium heat. Add the onion and garlic and sauté for about 5 minutes, or until the onion is translucent. Add the fresh ginger, cumin, cayenne, chili powder and fresh ground pepper.
2. Add the tomato paste, potato, nudefood peanut butter, vegetable broth and water. Stir together then bring to a boil.

3. Reduce to medium-low heat and simmer for about 20 minutes, until the potato is tender.

4. Add in the chickpeas and spinach or kale, and cook until the green are wilted. 

5. Serve warm with rice or quinoa, and top with fresh cilantro, peanuts and lime juice. We topped ours with some more PB cause we can't get enough! 


We can't wait to make this soup all the time to warm us up in the coming autumn season, For a soup filled with more seasonal veggies, use white potatoes in the spring and summer and sweet potatoes in the fall and winter!
